The user manual doesn't mention anything about logging out, but there is an option to delete an e-mail account and that would probably work just as well. If you aren't checking your e-mail your phone won't use up any data unless you've set it up so that it syncs automatically and all new e-mail gets pushed from the cloud to your phone.
